Course 1: Hamachi (Japanese yellowtail) with coconut-jalapeño crudo and bonito flakes
Course 2: Quinoa sushi amuse-bouche with wasabi, wakame, dragon fruit, and sesame
Course 3: Fondant celeriac, Miso Beurre Monté, pickled walnuts and chestnuts
Course 4: Asian salad with yakitori chicken
Course 5: Tournedos with sweet potato cream, seasonal vegetables and truffle gravy
Course 6: Custard panna cotta, frozen blueberries, lotus crumble, and micro mint
